Choosing the Right Turkey for Your Feast


With Thanksgiving approaching, you might be wondering what kind of turkey to buy for your big feast. The choices can be a little confusing. Check this quick guide to learn what the different labels mean.


Butterball:

 Despite the name, these turkeys don’t actually have any butter. Fresh Butterball turkeys have no added ingredients and come fresh or frozen. Frozen versions are injected in the breast with a solution of vegetable oil, water, salt, emulsifiers, and a preservative. The solution is meant to enhance the flavor and provide moisture that is lost during the freezing process.

Kosher:

 Kosher turkeys are soaked in cold saltwater even before the feathers are plucked, to draw out blood and impurities. Because they go through both rabbinical and USDA inspections, the birds are very clean. The saltwater soak also makes for a more flavorful bird. Kosher poultry are fed an all-natural diet with no hormones or antibiotics.

Free-Range: 

These birds are fed an all-natural diet and aren’t confined. Often, the birds eat natural feed that is not organic, but has been tested for chemical residue. Generally they have more breast meat, about 50% less fat, and a quarter fewer calories than regular turkeys. However, some consumers have found that free-range turkeys are a little tougher and cook slightly faster, because they are less fatty.

Stay Healthy in Your Hotel Room




Even the nicest hotel room can make you sick when you travel. A study from one online travel site found that 20 percent of female travelers come down with some kind of illness when staying at a hotel. Whether you are traveling for work, for the holidays, or taking a vacation minimize your risk of catching something by following these guidelines:


Go smoke free. Request a smoke-free room when you make your reservation or check in. Even better? Request to be on a smoke-free floor.

Hide the bed cover. Mites and other pests can hide in bedspreads. Remove the cover and stash it in a far corner of your room.

Pack disinfectant wipes. Wipe down the telephone and TV remote before using them to avoid harmful germs and bacteria.

Avoid drinking glasses. Use wrapped plastic cups and water bottles for your drinking water instead of glassware that has been used previously – which may still retain germs.

Eat healthy. Bring your own snacks like dried fruits, nuts, and granola bars. Eating light, healthy snacks can help you avoid the temptation to overeat, which can result in weight gain or indigestion.

Get enough sleep. Pack eyeshades and, if necessary, use a white noise generator to ensure you get sound sleep under any circumstances.

Stay active. Spend some time in the exercise room, take a walk around the neighborhood, or just move around your hotel to keep your blood flowing.

November Featured Recipe: Pecan Bars

Pecans aren’t just for pie. Try this simple, 6-ingredient dessert for a perfect finish to your next meal. 


Crust

  • 1 ½ sticks cold, unsalted butter, cubed
  • 1 ½ cups unbleached, all-purpose flour
  •  2/3 cup light brown sugar
  • 1 teaspoon Kosher salt

Filling

  • 1 stick unsalted butter, softened
  • 1 cup light brown sugar
  • Pinch of salt
  • 1/3 cup light corn syrup 
  • 1/4 cup unbleached, all-purpose flour
  • 3 cup coarsely chopped pecans


Preheat oven to 350 degrees F.

Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil. In a food processor, blend together flour, sugar, butter, and salt until the mixture resembles coarse sand. Add 2 tablespoons of cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in the oven until golden in color, about 20-25 minutes.

Meanwhile, make the filling. In a stand mixer fitted with the paddle attachment, add the butter, brown sugar, and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour, and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30-35 minutes. Remove the dish from the oven and allow it to cool completely in the pan.

Remove from pan by pulling up the sides and putting it on a cutting board. Cut bars in desired size with a sharp knife. Recipe courtesy of foodnetwork.com
